Its hard to pick one but I think the most important thing to realise about evolution is that it is not a linear series of animals eventualy leading to humans but more like a large tree with billions of branches representing every single species.
I think this is important because it changed how humans looked at the world making us stop thinking we are the centre of creation to realising that everthing alive today or that has ever lived is in fact related to us.
